Red Rabbit – St. Paul

Diversified Construction recently wrapped up construction at Red Rabbit on Grand Avenue in St. Paul.  After the first Red Rabbit location opened in the North Loop in 2016, owner Luke Shimp knew the second location wouldn't be far behind.

At 6,000 square feet and a 12 week schedule which included two Holiday's, we had a lot to do. Construction included a complete gut of the space, structural steel modifications, expanding the bar to hold 40 taps and installing a wood-fired oven for the mouth-watering pizzas and menu items like braised short rib and chicken parm. New design features include beautiful patterned floor tile which creates definition around the bar and the use of charred cedar wood as a decorative finish. The ancient Japanese technique of preserving cedar with fire was also recently used at Revival Smokehouse in St. Pauls' Keg and Case Market.
